stewed sausages and beans
  • Difficulty: Easy
  • Cost: Cheap
  • Preparation time: 10 Minutes
  • Portions: 2People
  • Cooking methods: Stovetop
  • Seasonality: Fall, Winter

Ingredients

  • 9 oz sausages
  • 8 oz canned cannellini beans
  • 1 cup tomato sauce
  • 1 clove garlic
  • 1 sprig rosemary
  • 2 leaves sage
  • Half cup white wine
  • chili pepper (to taste)
  • extra virgin olive oil
  • salt

Tools

  • Pan
  • Colander

Preparation

  • Cut the sausages into pieces and prick the casing with a toothpick. I used luganega type sausages, but classic sausages are also fine.

Put them in a pan, without oil, and brown them for a couple of minutes (1). Deglaze with white wine, let it evaporate, then turn off the heat and transfer the sausages to a plate.

  • In the same pan, pour a drizzle of oil, add the garlic, the sage, and the rosemary. Sauté for a moment, then add the cannellini beans, previously drained and rinsed.

  • Also add the tomato sauce, adjust the salt and add a pinch of chili pepper to taste (2).

Let the sauce reduce over low heat for 5-6 minutes.

  • Now add the sausages (3), stir and cook for about ten minutes, still over moderate heat, covering with a lid.

  • Stewed sausages and beans are ready, serve them hot, with slices of toasted bread, or with polenta… enjoy your meal!

Tips and notes

You can also use other varieties of beans (Spanish white, borlotti, etc.), both dried and canned.

You can use tomato sauce, fine pulp, or peeled tomatoes cut into pieces. You can also flavor the sauce with onion or shallots, instead of garlic.

FAQ (Questions and Answers)

  • Can I prepare the dish in advance?

Of course, you can make it a few hours ahead and reheat it when needed. If the sauce dries out too much, you can add hot water or vegetable broth.
