Margherita Cake

Margherita cake, a classic dessert among the most known and loved, ideal for breakfast. Margherita cake is made from a very simple, fragrant dough based on eggs, flour, and sugar, enriched with lemon zest that gives a tempting aromatic touch and softens the taste of the eggs. The margherita cake probably owes its name to the intense yellow color of the dough and the generous dusting of powdered sugar that simulates the colors of a daisy.

It is a very soft and delicate cake, excellent to enjoy plain, but also ideal for filling.

Ingredients

LET’S SEE TOGETHER WHAT WE NEED TO PREPARE

  • 5 eggs
  • 1 egg yolk
  • 1 cup all-purpose flour
  • 3/4 cup sugar
  • 3/4 cup potato starch
  • 1/2 cup butter
  • 1 packet baking powder
  • 1 lemon (grated zest)
  • vanilla
  • 1 pinch salt
  • powdered sugar

  • 1 Cake Pan
  • 1 Food Scale

Steps

Let’s start preparing

  • To prepare the margherita cake melt the butter over very low heat then let it cool. Beat the eggs, yolk, and sugar in a bowl with electric beaters for 5-10 minutes.

    You should obtain a light and fluffy mixture.

    Add a pinch of salt, the grated zest of a lemon, and the vanilla and mix with the beaters.

Add the flour, potato starch, and baking powder, previously sifted. Always mix with electric beaters until incorporated.

Pour the melted butter, which in the meantime has cooled, and mix with the beaters.

Grease a 9.5-inch diameter cake pan with the release agent. Adhere a disk of parchment paper cut to size to the base of the pan to help easily remove the cake once baked. Pour the batter into the cake pan.

Bake in a static oven at 338°F for 40 minutes. Once baked, take it out and let it cool.

Unmold the cake and place it on the serving plate.

Dust the surface with powdered sugar
