Margherita Cake, a classic and much-loved dessert, ideal for breakfast. The Margherita cake is made from a very simple and fragrant batter of eggs, flour and sugar, enriched with lemon zest which gives an inviting aromatic touch and mellows the egg flavor. The Margherita cake probably owes its name to the intense yellow color of the batter and the generous dusting of powdered sugar that mimics the colors of a daisy.
It is a very soft and delicate cake, excellent enjoyed plain, but also ideal for filling.

Ingredients
HERE’S WHAT YOU’LL NEED TO PREPARE
- 5 eggs
- 1 egg yolk
- 1 cup all-purpose flour
- 3/4 cup + 2 tbsp granulated sugar
- 3.5 oz potato starch
- 1/2 cup butter
- 1 packet baking powder
- 1 lemon (grated zest)
- vanilla
- 1 pinch salt
- powdered sugar

- 1 Removable-bottom cake pan
- 1 Kitchen scale
Steps
Let’s start preparing
To prepare the Margherita Cake, melt the butter over very low heat and then let it cool slightly. Beat the eggs, the egg yolk and the sugar in a bowl with electric beaters for 5–10 minutes.
You should obtain a pale, frothy mixture.
Add a pinch of salt, the grated zest of one lemon and the vanilla, and mix with the beaters.
Combine the flour, the potato starch and the baking powder, previously sifted. Continue mixing with the electric beaters until incorporated.
Pour in the melted butter, which will have cooled slightly, and mix with the beaters.
Grease a 9.5-inch cake pan with the pan release. Fit the base of the pan with a round of parchment paper cut to size; this will help you remove the cake easily once baked. Pour the batter into the pan.
Bake in a static oven at 338°F for 40 minutes. Once baked, remove from the oven and let cool.
Remove the cake from the pan and place it on a serving plate.
Dust the surface with powdered sugar.
