Microwave pancake an extremely easy and quick recipe to prepare excellent pancakes for breakfast for the whole family! After all my numerous pancake variations, including the Oat Flour and Greek Yogurt Pancakes, the Whole Spelt Pancakes, and the legendary Fluffy Pancake cooked in an air fryer, I decided to try cooking pancakes in the microwave, and I must say that I found the right recipe to achieve a fluffy and nicely tall pancake, almost comparable to the softness of my Microwave Yogurt Cake!
To make my microwave pancake even more delicious, I decided to enrich it with blueberries, but if you have some Blueberry Jam you can leave the pancake plain and then spread your favorite jam or cream on top once cooked, like the Pastry Cream!

Ingredients
- 2 1/2 cups all-purpose flour
- 1 1/4 cups milk
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 3 eggs
- 3 teaspoons baking powder
- 1 pinch salt
- vanilla extract
- 3/4 cup blueberries
What you need to cook the microwave pancake
- 1 Pot microwave heater
How to prepare the microwave pancake
Crack the eggs into a large bowl.
Add the sugar to the bowl and mix with a hand whisk to combine the two ingredients.
Then pour in the vegetable oil and milk and mix again.
Flavor to taste with vanilla extract and finally add the dry ingredients.
Sift the flour together with the baking powder over the batter for your pancake.
When you have mixed all the ingredients and obtained a homogeneous batter, grease the microwave craftina and pour half of the batter into it.
Finish by adding the blueberries on top.
Cook the microwave pancake for 15 minutes on combination plus grill function.
When the microwave pancake is cooked, remove it and serve it immediately hot.
How to store the Microwave Pancake
The microwave pancake can be stored at room temperature for two days.
You can use half of the batter right away, and keep the other half in the fridge for two days.
