Love letters of puff pastry are delicious treats made from puff pastry that are easy to make.
They are puff pastry rectangles filled with red jam, strawberry, raspberry, or other fruit of your choice, with a small heart-shaped hole sealing an envelope to prepare in less than half an hour and to eat in two bites!

Ingredients
- 1 sheet puff pastry (rectangular)
- red jam (strawberry or raspberry or other fruit of your choice)
- milk
- sugar
Preparation of Love Letters of Puff Pastry
Unroll the puff pastry.
With a smooth-bladed knife, divide it in half starting from the center of the shorter side to its opposite and then cut parallel strips to the short side about 2 inches apart, thus creating rectangles.With a heart-shaped cutter, cut out a heart about 0.8 inches from the center of one of the shorter sides of each rectangle.
Spread a teaspoon of jam on the opposite side of the heart then close the free side with the heart-shaped hole over the filling by practically folding the rectangle in half.
Make two small cuts without reaching the bottom starting from the two corners of the longer side towards the cut-out heart and then press the borders of all sides of the rectangle with the tines of a fork.Place the envelopes of your love letters thus created on a baking sheet lined with parchment paper.
Brush them with a little milk and sprinkle with a bit of sugar.
Bake in a preheated fan oven at 392°F for twelve minutes.
Remove from the oven, let cool completely, and serve your love letters of puff pastry.
They keep for two days under a cake dome.
