What a delight the potato casserole with sausage and mozzarella is, baked or more quickly in an air fryer. You can’t imagine the goodness that comes with fresh Calabrian sausage. I prepared this dish with homemade sausage, from a pig raised with only farm products, a unique taste I can’t find anywhere else, and just a little is enough to flavor my dish for two. To enrich it, besides mozzarella, I also used some smoked provola, which makes the dish even tastier. For 2 people, I prepared just 3 medium-large potatoes, thinking they might be too much since we were still full from lunch, but they were so good that we ate them all, a real delight. That’s why I want to share the recipe with you. And yes, you’re right, you might not find fresh Calabrian sausage as good as my mom’s, which is admittedly impossible, but you can add fennel seeds and red pepper powder, either sweet or spicy according to taste, to the sausage, so it will more closely resemble our homemade sausage.

- 3 medium-large potatoes
- 3.5 oz mozzarella
- 2.1 oz smoked provola
- 3.5 oz fresh sausage
- to taste oregano
- to taste salt
- to taste extra virgin olive oil
- 1/4 cup milk

Steps for Quick Potato Casserole Preparation with Sausage and Mozzarella
Peel the potatoes, wash them, and place them in a bowl. Cover with plastic wrap and cook in the microwave at 1200 watts for 7 minutes. If the microwave is less powerful, leave them a little longer until cooked. Alternatively, you can boil them.
Prepare the other ingredients for the recipe: slice the mozzarella and provola, crumble the sausage after removing the casing, and gather oregano, salt, and a little oil.
Use a 20 cm diameter baking dish, add a little olive oil and oregano at the base.
Meanwhile, the potatoes are cooked, slice them into round slices of the same thickness on a cutting board.
In the baking dish, layer potato slices, season with salt and oregano, add crumbled sausage, leaving a little to put on top, and add mozzarella and provola, leaving a little to decorate the top. Alternatively, you can use breadcrumbs with a little parmesan for the top, in which case you use all the cheese and sausage in the first layer.
Create a second layer with potatoes, season again with salt, oregano, a drizzle of oil, add the milk, and now you can use breadcrumbs and parmesan or one of the two, or again the cheese and sausage you had set aside.
Cook in the air fryer at 340°F for about 10-15 minutes. If the surface colors too much, cover the baking dish with a sheet of aluminum foil. Remember not to use parchment paper as it might catch fire in the air fryer.
If there’s some milk left after cooking, you can microwave the casserole for 2 minutes using a suitable baking dish so the milk evaporates completely. In this way, it cooks quickly without needing to be put in the oven, but if preferred, you can put the baking dish directly in the oven at 350°F for about 20 minutes. And if you don’t have a microwave, you can simply boil the potatoes first.
If you can’t find Calabrian sausage, you can also use regular sausage and add red pepper powder and fennel seeds for more flavor.
