SUGARED CAKE OF THE SIMILI SISTERS

Ingredients RECIPE SUGARED CAKE OF THE SIMILI SISTERS
- 2/3 cup all-purpose flour
- 2/3 cup Manitoba flour
- 3/4 oz fresh yeast
- 1/3 cup milk
- 3 1/2 cups all-purpose flour
- 7 oz water
- 3 egg yolks
- 2 tbsp granulated sugar
- 1 tsp fine salt
- 1 organic lemon (zest)
- 7 tbsp soft butter
- 3 1/2 tbsp melted butter (for the cake balls)
- 1 1/4 cups powdered sugar
- 3 egg whites
- 1 tbsp white rum

Preparation Recipe Sugared Cake of the Simili Sisters
First, make the starter dough by quickly mixing the ingredients and then letting it rest until the dough ball doubles in size. After about an hour, dissolve the starter dough in a bowl (or in the stand mixer) with the water.
Then add the pre-whisked egg yolks in a bowl, and gradually add all the other ingredients, keeping the butter last to add in small pieces.
If you prepare the sugared cake of the Simili Sisters by hand, work the dough vigorously for almost ten minutes until it comes away from the bowl.
Now put it on the pastry board and continue to beat it without adding too much flour even if it appears “soft”. Lightly grease a large bowl and let the dough rise a second time for about another hour.
After the time has passed, take the dough, put it on the work surface, and after working it slightly, make many balls (the Simili Sisters say 16, but I made more) which, after brushing with melted butter, you will need to arrange neatly in your 10-inch diameter pan.
Cover your dough arranged in balls on the pan again and let rise for about 30 minutes.
Now, and you’ll finally say bake the sugared cake of the Simili Sisters at 375°F for about 40 minutes or depending on your oven characteristics, it should be golden as you see in the oven!
For the water icing that I made, just mix vigorously the powdered sugar with water, adding it little by little: it should be fluid and creamy!
As soon as the sugared cake of the Simili Sisters is baked and warm, sprinkle it spirally with the icing and serve it at the table.
Leavened products like the sugared cake of the Simili Sisters are for me the best for breakfast, but this cake, if wrapped in appropriate transparent paper, stays fragrant and delicious for 2/3 days! Enjoy your meal!
