This chicken and potato recipe was created to use up leftovers and is very simple and tasty!
I think everyone finds themselves with leftover roast chicken or boiled chicken in the fridge and tries to come up with an appetizing way to put something easy, homemade, and delicious on the table.
Potatoes then become the soft and enveloping base containing the meat flavored with tomato puree, and after a quick bake in the oven (since almost everything is already cooked, right?), the pie is ready to be served.
With the chill of autumn slowly arriving, it’s a one-dish comfort food and also a smart idea that saves us time and prevents waste while still putting a rich and flavorful dish on the table.
Personally, I think it’s perfect for dinner, to serve in generous slices and to make again when you have some leftover chicken!

Possible variations
You can also use pork or beef, and you can substitute the meat with tuna or mixed sautéed vegetables.
You can use your favorite sauce to season the meat. This potato and cooked meat pie will also be delicious if we use bechamel sauce instead of tomato sauce.

Ingredients
- 2.6 lbs potatoes, with skin, cooked, boiled
- 12.3 oz chicken breast, cooked, pan-fried
- 7.1 oz tomato sauce (datterini Mutti for me)
- 5.3 oz cheese (sliced like mozzarella leerdammer or …)
- 2.8 tbsp butter
- 4.2 oz Grana Padano, grated
- 1.8 oz diced speck (or bacon or pancetta as desired)
- to taste salt
- to taste pepper
- to taste nutmeg

Steps
Let’s start! Peel the previously cooked potatoes, then mash them with a potato masher or a fork and season with butter, pepper, salt, and grated nutmeg.
Chop the meat with a knife into pieces: I didn’t choose the mixer because I didn’t want to end up with a mushy paste 😉.
Now it’s time to assemble the chicken and potato pie, so…
On the bottom of the baking pan, I put a drizzle of EVO oil then make a layer of potatoes, add the chicken seasoned with tomato sauce.
Then add some slices of cheese, then another layer of potatoes, and more cheese.
More potatoes, then grated cheese and diced speck on top.
Now I just place the baking pan in a preheated oven at 392°F for about 15/20 minutes or until the potato and chicken pie is nicely golden on the surface.
Let it cool slightly and then to the table!!!!!!!!!!!!
