Chocolate Carnival Fritters Preparation Steps

  • In a bowl, combine sugar and butter, work it a bit by hand, then add the flour to obtain a crumbly mixture, add eggs, vanilla, and liqueur and work to obtain a nice firm dough. Let it rest for a bit.

  • Prepare the necessary to roll out the dough. Use the pasta machine, or alternatively a rolling pin. Prepare a large, clean surface.

  • Divide the dough into at least 6 parts and roll one at a time in the pasta machine, starting with the rollers at maximum. At first, fold the dough several times to get a perfect sheet. If necessary, use a little flour. Then close the rollers one level at a time until the penultimate one and gradually thin the sheet. Use a little flour before passing it to the penultimate level, then place it on the surface.

  • With a pastry wheel, cut the fritters into the desired shape, usually rectangles.

  • Fry in plenty of hot seed oil, allow to brown on both sides and drain on absorbent paper.

  • Melt 200 g of dark chocolate in a double boiler or in a bowl in the microwave, heating for a few seconds at a time. Once cool, place the fritters on a tray and drizzle with the melted chocolate. Keep in mind that with these quantities, you get at least 4 large trays. Sprinkle with colored sprinkles when the chocolate is still soft, and let cool without stacking.

  • When the chocolate hardens, if desired, you can add powdered sugar, but they are delicious even without it.
