Savory Leek and Cooked Ham Tart

Ingredients

  • 8.8 oz leeks (including 3.5 oz for decoration)
  • 1.4 tbsp butter
  • 2 pinches fine salt
  • 2 eggs
  • 2.8 oz cream cheese
  • 2 tbsp Parmesan cheese (grated)
  • 1.3 cup milk
  • 5.3 oz cooked ham (slices or chunk)
  • 1 puff pastry (round of 8.1 oz)
  • to taste juniper berries (for decoration)
  • to taste pink peppercorns (for decoration)

Steps

  • Start by preparing the leeks. Wash them and remove the harder parts, cut them into rings. Set aside one leek with the greenest color for decorating the quiche.

  • In a pan, add the butter, melt it, and add the leeks. Season with salt and cook for about 20 minutes or until they are soft. Let them cool.

  • In a bowl, place the leeks, eggs, Parmesan cheese, and cream cheese, and mix well to combine the ingredients.

  • Now add the milk and the cooked ham cut into small cubes and mix again.

  • Cover a round baking pan with parchment paper, 10.24 inches in diameter, and pour in the leek and milk mixture. Roll up the edges of the puff pastry creating a pattern.

  • Decorate the surface with the remaining leek cut into thin slices.

  • Bake in the oven at 356°F for about 50 minutes. I decorated the surface with juniper berries and pink peppercorns, but only for aesthetics.
