Mushroom Crepes

Mushroom Crepes are suitable for the autumn season, but not only, to be used for a hearty lunch or even to bring to a dinner with friends.

Ingredients

  • 2 eggs
  • 200 ml milk
  • 3/4 cup all-purpose flour
  • 1 pinch fine salt
  • 2 pinches black pepper (ground)
  • 7 oz mushrooms
  • 1 clove garlic
  • 1 onion
  • 1 tablespoon olive oil
  • 5 oz smoked pancetta (diced)
  • 3 1/2 oz broccoli
  • 2 cups milk
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 tablespoons grated parmesan cheese
  • to taste fine salt
  • to taste black pepper (ground)
  • 5 oz emmentaler
  • as needed butter (spray, cooking spray)
  • 4 tablespoons breadcrumbs
  • 1 1/2 oz grated parmesan cheese

Preparation

  • In a bowl, beat 2 eggs with 3/4 cup of flour and 200 ml of milk, add a pinch of salt and pepper.

    Pour a ladle of mixture into a non-stick pan, tilting it so that it spreads over the entire surface.

    Cook for a few seconds, flip the crepe, and place it on a plate.

    You will get about 8 crepes.

  • Cut the mushrooms into small pieces, sauté them in a pan with 1 clove of garlic, chopped onion, a tablespoon of oil, diced pancetta, chopped broccoli, and cook for about 20 minutes.

  • Prepare the béchamel (for the recipe, click on the link) using the same quantities indicated in the recipe.

  • Fill the crepes with the mushroom mixture, diced emmenthal, and roll them, folding the edges down.

    Spray a rectangular baking pan with butter spray and put a thin layer of breadcrumbs, place the stuffed crepes and sprinkle them with béchamel and parmesan.

    Bake at 355°F for 20 minutes, until they are golden.

Notes

I usually butter the pan with butter spray, but if you prefer, you can use a small piece of butter in a stick. I find it practical as I waste less and can spread it evenly on the pan.

You can choose mushrooms according to your tastes and preferences, champignons are perfect.
