Barley Burger with Kiwi Guacamole and Confit Tomatoes is a dish with a unique taste, featuring decidedly unusual elements that blend perfectly together. The preparation is a bit lengthy, so I recommend making it when you have some time to spend in the kitchen.

Ingredients
- 3/4 cup barley
- 1/2 lb pork (ground)
- 3 eggs
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 teaspoons chives
- 2 teaspoons thyme
- 2 pinches fine salt
- 2 pinches black pepper
- 15 leaves lettuce
- 2 kiwis
- 30 coriander seeds
- 1 tablespoon lime juice
- 1 tablespoon parsley (dehydrated)
- 1 teaspoon sesame seeds
- 4 tablespoons olive oil
- 1 clove garlic
- 4 pinches fine salt
- 1 pinch black pepper (ground)
- 1 teaspoon baking soda
- 1 teaspoon sugar
- 10 cherry tomatoes
- 4 teaspoons brown sugar
- 1 tablespoon olive oil
Preparation
Cook the barley in salted water for about 30 minutes.
Sauté the ground meat in a pan.
Once the barley and ground meat have cooled, place them in a bowl, add the eggs, breadcrumbs, Parmesan, chives, thyme, and mix well with a spoon.Adjust with salt and pepper.
Form small burgers using a round cutter or a small bowl, not too thick so they cook through.
Heat a tablespoon of oil in a pan and cook the burgers for about 15 minutes.Cut the kiwis into small pieces, add the coriander seeds, lime juice, parsley, sesame seeds, minced garlic, olive oil, and blend everything in a blender.
Adjust with salt, pepper, sugar, and add some baking soda to balance the acidity.In a small pan with one tablespoon of hot oil, place the cherry tomatoes.
Add the brown sugar and let them caramelize.
On a plate, place some lettuce leaves, two burgers, some kiwi guacamole, and a few confit tomatoes.
Notes
The most challenging part for me was balancing the flavors of the kiwi guacamole: achieving the right balance of sweet, salty, and sour was not easy!
