Oven-Baked Potato and Salami Omelette

The Oven-Baked Potato and Salami Omelette is a tasty dish that can also be used to clear out your fridge. The ingredients can vary depending on what you have available: you can use different types of cold cuts, cheeses, or spices and flavors. I wanted to create heart shapes to propose it for Valentine’s Day.

Ingredients

  • 1 onion
  • 14 oz potatoes
  • 4 eggs
  • 5 oz salami
  • 2 tbsps olive oil
  • 2 tsps fine salt
  • 2 tsps black pepper (ground)
  • 4 tbsps Parmigiano Reggiano DOP (grated)
  • 2 tbsps breadcrumbs
  • 1 tbsp butter

Preparation

  • Wash, peel, and cut the potatoes into small cubes, put them in a pan with a little oil, add the chopped onion, salt, and pepper.

    Once cooked, let them cool and pass them through a potato masher.

    In a bowl, place the eggs, mashed potatoes, Parmesan, chopped salami, and mix trying to combine the ingredients well.

    Place the mixture in a 11-inch diameter baking pan, buttered and then coated with breadcrumbs. The omelette should not exceed 3/4 inch in height.

    Bake in the oven at 350°F for 20 minutes. I cut out many small hearts with a heart-shaped cutter.

Notes

If you prefer, you can cook the omelette in a pan with a little oil, it will certainly be tastier.
