Einkorn Pasta with Legume Cream

The simplicity of this recipe is disarming, einkorn pasta with legume cream. A main dish made with exceptional ingredients like einkorn spelt and Lamon borlotti beans. Nothing else? Well, a drizzle of delicious oil and a sprinkle of chia seeds.

I’ve talked a lot about einkorn spelt before. It is the ancient grain par excellence, (Triticum monococcum), also called little spelt (in German Einkorn or Enkir). Einkorn spelt is particularly rich in proteins, vitamins, carotenoids, and tocopherols and also minerals, iron, zinc, and manganese.

Excellent for pastries, sweets, pasta, even for making bread but you need to know how to do it because einkorn spelt contains a gentle gluten and is therefore suitable for intolerances.

Ingredients for Einkorn Pasta with Legume Cream

  • 280 g organic penne rigate
  • 200 g borlotti beans (cooked)
  • 1 pinch sea salt
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon chia seeds
  • 1 pinch thyme
  • 1 pinch lemon juice
  • 1 tablespoon lemon zest

Steps for Einkorn Pasta with Legume Cream

Simply blend 200 g of cooked borlotti beans with a little water, a tablespoon of oil, a pinch of salt, and dried thyme.

Meanwhile, bring water to a boil with sea salt and when it boils add the einkorn spelt penne rigate.

Cook for 10 minutes or for the time indicated on the package.

Drain in a bowl, add the borlotti cream, a pinch of lemon juice, grated lemon zest, and mix.

Plate and finish with a drizzle of oil and a sprinkle of chia seeds.

Tips and Storage

You can mix your einkorn spelt pasta with other legumes or with a vegetable pesto like broccoli. You can keep it closed in the refrigerator for one day.
