Artichoke Sauce in Multi Cooker a new recipe to add to my collection of Recipes with artichokes, delicious and very easy that cooks in no time thanks to the multicooker.
With the artichoke sauce cooked in the instant pot, you can dress a Quick main courses like pasta instead of the usual Tomato Sauce, or cream a delightful risotto or simply serve it paired with Air fryer crostini as an appetizer!

Ingredients
- 1 lbs artichokes (already cleaned, in wedges)
- 1.7 fl oz white wine
- 1.7 fl oz water
- 3 tbsps extra virgin olive oil
- 1 clove garlic
- 2 tbsps grated Parmesan cheese
- marjoram (or parsley)
- salt
- pepper
What is needed to prepare the artichoke pâté in the multicooker
- 1 Pot multicooker
How to prepare the artichoke sauce in instant pot
Peel the garlic, remove the central core, and chop it very finely with a knife.
Pour a round of oil inside the multicooker pot and add the chopped garlic.
Sauté garlic and oil for a minute with the appropriate function.
Add the artichokes already cleaned and cut into wedges and let them flavor for another minute.
Finally, season with the marjoram, adjust with salt and pepper, then add the water and white wine and give a good stir.
Close the pot, programming it with the low pressure function (230°F) and start the cooking for 12 minutes.
At the end of cooking, depressurize and remove the lid.
Let the mixture cool down, once it’s cool enough, add the grated cheese and mix.
Blend the ingredients with an immersion blender to obtain a smooth and lump-free cream.
If you want, you can use frozen artichokes already cleaned and in wedges. In this case, do not add water and cook for 10 minutes.
This sauce can also be used as a dressing for pasta, to cream a risotto, as a sauce for scaloppine, or simply as a pâté to accompany crostini.
If desired, once the artichokes are cooked, before blending them, you can use them as a side dish or as a filling for a pie or savory strudel.
