Protein Breakfast with Quinoa

A protein breakfast with quinoa is my proposal for today. Quinoa, as we know, is a gluten-free pseudo-cereal with 14% protein, a good energy ratio, and is a source of amino acids like lysine. It also provides iron, magnesium, zinc, phosphorus, and calcium.

After all this, why not use quinoa for breakfast? If you happen to have leftovers from your quinoa salad or from meatballs or again from cakes or soups, why not prepare a protein breakfast with quinoa, scrambled eggs and red fruit compote?

If you don’t fancy eggs, add some tofu, Greek yogurt, even soy yogurt, or even a good fagiotella or 100% almond cream mixed with a bit of malt. A valid alternative to porridge, the oats that are now popular every morning at breakfast.

I’ve often talked about quinoa, so you can find plenty of ideas on the blog, even as I hope to find Italian quinoa and still seek it to be organic and sustainable.

I’ll leave you with some ideas with this superfood that unfortunately comes from afar.

Ingredients Protein Breakfast with Quinoa

  • 1/4 cup quinoa, cooked
  • 2 eggs (organic cat A)
  • 2 tbsp blueberry compote (red)

Steps Protein Breakfast with Quinoa

Simply wash the quinoa very well with a fine sieve to remove all the saponins.

Cook it in three times its volume (if you cook 100 g, pour it into 300 g of water) for about 15 minutes. Turn off the heat and let it swell for a few minutes.

Drain well and use as you prefer.

Cook two organic scrambled eggs without added fats for 40 seconds in a skillet.

Pour the quinoa onto a plate, add the scrambled eggs and a couple of tablespoons of red blueberry compote.

As mentioned, you can change the protein instead of the egg, you can add tofu, sweet bean cream, yogurt, let your imagination run wild.
