This morning I made some very simple cookies, the Oat and Greek Yogurt 0% cookies, ideal for breakfast.
They are made in ten minutes and baked in 15. They are sweetened only with a couple of teaspoons of brown rice syrup, but as I often say, sweetness is to taste.
I used a mix of whole oat flour and whole einkorn flour, if you want them completely gluten-free, I recommend a mix of millet and buckwheat flour. You can naturally use soy yogurt.

Ingredients for Oat and Yogurt Cookies
- 2/3 cup oat flour
- 3/4 cup einkorn flour
- 5 oz 0% fat Greek yogurt
- 2 teaspoons rice syrup
- 1 pinch unrefined sea salt
- 2 teaspoons apricot jam
- 10 hazelnuts
- 1 teaspoon baking powder (tartar cream)
How to Make Oat and Yogurt Cookies
In a blender, mix yogurt with rice syrup (or honey or malt), add the two flours, the pinch of salt, and the baking powder, until you have a soft dough.
Line the baking sheet with parchment paper and form balls that you will place on the paper at a distance. Flatten them a little and make a dimple with the back of a teaspoon.
Add the jam to half the cookies and press a hazelnut into the other half.
Bake in a ventilated oven at 350°F for 15 minutes.
Tips and Storage
Oat and yogurt cookies should be stored in a tin for a few days. Being a fat-free yogurt cookie they tend to be soft and not crunchy, I recommend drying them a little in an air fryer the day after.
You can fill them with other dried or dehydrated fruit. Naturally, besides rice syrup, you can use honey, malt, or other sweeteners you prefer. You can also add soaked raisins to the dough.
