Fennel Tzatziki

A perfect autumn sauce, fennel tzatziki, fragrant and very simple to prepare.

Ideal to accompany with crudités, or sourdough bread. It can be made with either classic Greek yogurt or plant-based. A well-known Greek sauce, tzatziki, which is usually prepared in summer with cucumber. You can change the vegetable depending on the season. However, the essential ingredients are Greek yogurt, garlic, and a little vinegar. The dill is variable and can be replaced with fennel fronds, for example.

Ingredients for Fennel Tzatziki

  • 1 fennel
  • 16 oz Greek yogurt
  • 3 tbsp apple cider vinegar
  • 1 clove fresh garlic
  • 3 tbsp extra virgin olive oil
  • 1 pinch sea salt
  • 1 pinch pepper
  • 1 sprig dill

Steps for Fennel Tzatziki

  • Grate the fennel and let it drain in a sieve with a pinch of salt for a few hours. Squeeze a little, add the yogurt, vinegar, grated garlic, salt, pepper, and finally the dill.

    Mix and place in a tightly sealed container in the refrigerator for a few hours.
