I wanted to try the new prepared mix for KNÅDA multigrain bread with the bread machine.
The other day I went to Ikea and noticed these new bread mixes, intrigued I wanted to try them.
I checked the ingredients: wheat flour, wheat and rye flakes, rye flour, sunflower and flax seeds, barley malt, rye sourdough, yeast, and emulsifier E491.
I usually make my bread with my organic flours, and the only doubt was this E491, which is practically sorbitan monostearate, an emulsifier and stabilizer used in many baked products. It has no negative health effects on humans.
It is presented in a bag, and you just need to pour 1 3/4 cups of water inside, close the bag, and knead with your hands for 5 minutes. Then pour into an oiled loaf pan, let it rise for 45 minutes, and then bake at 392°F for 50 minutes.
I thought, why not try it with my bread machine? I poured the powders into the basket, added 1 3/4 cups of hot water. Closed and set the basic bread program (in my machine it’s program 2) that takes 200 minutes between kneading, rising, and baking.
The bread came out perfect; these are very dark loaves that stay slightly moist and soft, perfect just toasted for breakfast or vegetable croutons.
