Lavender Almond Kanten

A fabulous, fresh, fragrant summer dessert, the Lavender Almond Kanten. A little pudding that is prepared in a moment and finishes in a moment.
Yesterday I talked to you about lavender, this very fragrant plant, which can delicately enrich and color our dishes.

In this case, I used fresh flowers since I have a blooming plant in the garden. That doesn’t mean you can’t prepare it with dried flowers, but note that they are stronger, so you need very few.

Lavender Almond Kanten Ingredients

  • 1 1/4 cups almond milk
  • 1 teaspoon agar agar
  • 3 apricots
  • 1 teaspoon lavender flowers
  • 1 pinch sea salt
  • 1 tablespoon agave syrup (or erythritol)

Lavender Almond Kanten Preparation

  • The night before, soak a few lavender flowers in infusion in the almond milk. If you want, add a few leaves as well.

    Take the three apricots, wash them and cut them into small pieces, cook in a pan with a little water until you have a cream, set aside.

  • Pour the filtered almond milk into a saucepan, add the agave syrup and a pinch of salt. Bring to a boil and add the agar agar, stirring quickly, simmer for 5 minutes.

    Pour into molds, let cool, add the apricot compote, and decorate with a few lavender flowers. Refrigerate until serving time.

Advice for Lavender Almond Kanten

The kanten should be consumed within two days. You can replace the plant-based milk with apple juice, tea, water, or fruit juices. The important thing is to boil the liquid before adding the agar agar and then cooking it again for a few minutes. If the liquids are not sweet, you can add a few tablespoons of rice or corn malt.
