You know I don’t fry; if you check the blog, you won’t find fried recipes. For example, if I don’t bake meatballs, I brown them in a pan with a little oil, as I have an aversion to the smell of frying in the kitchen, so I always skip it. Then you need to be skilled at frying, know the oil, its smoke point, or opt for a fryer, but I never bought one because… I don’t fry.
An excellent alternative in my opinion is to choose an air fryer, so I recommend it.

For example, for vegetables, I mix a tablespoon of oil before placing them in the basket. With the castagnole, for example, just brush them with oil before starting the fryer or spray a puff of oil on the castagnole.

Ingredients
- 1 1/4 cups spelt flour
- 3 tbsps brown sugar
- 1/4 cup soy milk
- 1/4 cup sunflower oil
- 1 tbsp Strega liqueur (optional)
- 1 pinch sea salt
- 1 pinch vanilla (bourbon)
- 1 tsp lemon (grated zest)

Preparation
Emulsify together oil, milk, sugar, and liqueur.
Pour the flour with the baking powder, vanilla, lemon zest, and a pinch of salt into a bowl. Add the liquid ingredients and mix until you have a soft and malleable dough.
If you have time, leave it in the fridge for 30 minutes. Form balls with your hands about 1.2 inches in diameter.
Start the air fryer at 392°F for a couple of minutes before inserting the basket.
I cooked them in the air fryer at 392°F for about 9 minutes, turning them halfway through the cooking time.
Alternatively, you can bake them in the oven for 12 minutes at 356°F. Or fry them in the traditional way.
Tips
Castagnole without butter and eggs can be stored for a week in a tin box. You can also add chocolate chips or raisins during cooking.
