Cecine and more cecine and then some cecine. This time here are the simple cecine – chickpea crepes three flavors.
Turmeric cecine, chia seed cecine, aromatic herb cecine. These small skillet pancakes can easily replace bread or be transformed into chickpea crackers.
Ideal for accompanying any seasonal vegetables, these small gluten-free crepes are perfect for those with wheat intolerance.
As you know, chickpea flour provides a good amount of vegetable proteins. Rich in fiber, it aids digestion.
The only precaution to take is to always let the flour soak for a few hours at room temperature, so fermentation occurs, making it digestible.

Ingredients for the Batter
Note this is a crepe batter, so it’s one part flour to three parts water, whereas if you want a pancake-like cecina, you should use a 1:2 ratio. Naturally, the pancake, being thicker, requires a few more minutes of cooking.
- 1.25 cups chickpea flour
- 1.9 cups water
- 1/4 tsp sea salt
- 1 tsp ground turmeric
- 1 tbsp chia seeds
- 1 tbsp aromatic herbs (mixed)
- 2 tbsp extra virgin olive oil

Preparation
Pour the chickpea flour into a bowl. Add the water and stir quickly to avoid lumps. You can do this in a blender.
Allow the batter to rest at room temperature for a few hours or even overnight.
Add oil and salt and mix again. Divide the batter into three bowls. In the first bowl, add chopped aromatic herbs, lightly oil the pan, pour a little batter, and cook until you see bubbles forming on the surface. Flip to the other side and continue cooking for a couple of minutes. Finish the cecine from the first batter and move on to the second.
Using the same procedure, prepare the turmeric cecine and then those with chia seeds.
You can serve the cecine alongside hummus, sautéed vegetables, even with tofu and tempeh. The chia and turmeric cecine are also excellent for breakfast with a layer of fruit spread.

Tips and Storage
You can freeze the cecine separated with unbleached parchment paper free of Pfas. They last for 3 months. Just a few minutes in a pan are enough to warm them up.
