Vegan gluten-free peach clafoutis, a very simple, versatile, and sugar-free dessert.
It only has a fancy name, but it is one of the fastest and tastiest desserts that exist.
I’m talking about the clafoutis, which is prepared in half an hour. My version is not too sweet, with peaches, plums, malt, and apple juice.
With buckwheat flour, gluten-free, light, and delicious.
The clafoutis is a dessert of French origin from the Limousin area.
Very quick to make, French tradition indicates it with cherries, but depending on the season, it is now prepared with many other fruits. Its name derives from the dialect, “clafir” which means to garnish, fill.
According to tradition, the clafoutis was made with whole wild cherries, with very fragrant pits, and was the meal of farmers who carried it with them on workdays while cutting and gathering hay.

Ingredients Vegan Peach Clafoutis
You can use only peaches if you don’t have plums, use 5 instead of 4. If you want, before serving, you can sprinkle with chopped almonds.
- 4 yellow peaches
- 4 red plums
- 3 tablespoons gluten-free rice malt
- 3/4 cup buckwheat flour
- 3/4 cup apple juice
- 1 teaspoon baking powder
- 3 tablespoons extra virgin olive oil (delicate)
- 1 pinch sea salt
- 1 teaspoon lemon (zest)

Preparation Vegan Peach Clafoutis
I used a 22 cm cake pan and as you can see the dessert is not very tall also because being very soft it does not hold its shape very well. You can opt for mini ceramic pans and present it that way.
Wash and peel the peaches and cut them into slices with the plums.
In a bowl, mix the fruit with a tablespoon of malt. Pour into a 20/22 cm cake pan lined with baking paper. Emulsify the apple juice with the malt and oil, mix the flour with the baking powder, salt, and lemon zest.
Pour everything over the fruit in the cake pan and bake for 30 minutes at 350°F. Let it cool well and flip onto a serving plate.
How to Store the Vegan Peach Clafoutis
The dessert is made with fresh fruit, so it should only be kept in the refrigerator for a maximum of two days.
