Halloween cookies with a sweet shortcrust pastry prepared with the usual 50 g of white chocolate. Since I discovered that the shortcrust becomes more crumbly and has a tantalizing flavor, sweet but not too much, I always add chocolate to the dough. Unlike all savory dishes, improvisation does not apply to sweets. For sweets, precision is needed, a scale is required, and one must be more than precise. It is always a good habit to weigh all ingredients before starting a preparation like cookies in this case, thus simplifying and speeding up the preparation. Ideal for Halloween, these cookies can actually be prepared anytime, at any moment, they keep for a long time, and when closed in a jar, they maintain their crumbliness for a long time.

Ingredients for making Halloween cookies

  • 2 1/8 cups Manitoba flour
  • 5 2/3 tbsp butter
  • 1/3 cup powdered sugar
  • 1 egg
  • 1 3/4 oz white chocolate
  • 1 lemon (grated zest)

Steps necessary for making Halloween cookies

  • First, melt the white chocolate bar in a bain-marie or in the microwave for 30 seconds.

  • Put all the ingredients in the stand mixer and start.

  • Add the melted chocolate and let all the ingredients combine.

  • Roll out the shortcrust pastry and with the 4-inch cookie cutter cut the cookies, always using the same cutter cut the two sides of the cookie, then use a straw to make two holes for the eyes, a small hole for the nose, and with the tip of a knife make a small square to simulate the mouth.

  • Bake the Halloween cookies on a baking tray with parchment paper for 18 minutes at 356°F.
