Steps for Cod with Potatoes and Olives
To prepare the cod with potatoes and olives recipe, first pour a drizzle of oil into a large pan, add the garlic and finely chopped onion and sauté over medium heat for a few minutes.
When the onion has softened, add the sliced chili pepper, cubed potatoes, and oregano. Stir and continue cooking for a few minutes, always on low heat.
Add the pieces of cod, placing them on the bottom of the pan, turning them after a while. Add the olives and water.
Cover and cook until the potatoes are tender and the broth is reduced. Turn off the heat and add the chopped parsley.
Before serving, adjust the salt as the cod and olives are already quite salty.
