But no worries if you don’t have an Air Fryer! Whether you choose the air fryer or the traditional oven, the result will be irresistible: the flavor of the spinach perfectly complements the smoky note of the speck, while the béchamel ties it all in a creamy embrace.

To add a crunchy note to these Spinach and Speck Lasagna in a Air Fryer, I added chopped walnuts on top that perfectly match the spinach and speck.

Ingredients

Ingredients for 5/6 servings

  • 18 oz spinach (fresh)
  • 1 clove garlic
  • 1 drizzle extra virgin olive oil
  • to taste salt and pepper
  • 3.5 oz butter
  • 3.5 oz flour
  • 4 cups milk
  • to taste salt
  • to taste pepper
  • to taste nutmeg
  • 7 oz thin egg lasagna sheets
  • 7 oz speck slices
  • 3.5 oz Grana Padano cheese (or Parmesan)
  • to taste walnuts (chopped)
  • 2 tablespoons Grana Padano cheese

Steps

Preparation of Spinach and Speck Lasagna in Air Fryer

  • Wash the spinach thoroughly, pat them dry, and place them in a large pan or pot with 1/2 clove of garlic and a drizzle of extra virgin olive oil.
    Set them on the stove, cover them with a lid, and cook over medium heat until tender, it will take a few minutes

  • Once ready, remove the garlic, drain and squeeze them to remove the excess water. Chop the spinach with scissors or a knife, season with salt, pepper, and set aside

  • Prepare the béchamel: melt the butter in a pot, add the flour and stir with a whisk for a few seconds, add the milk gradually and continue to stir to avoid lumps. Add salt, pepper, and a generous grating of nutmeg. Finish cooking until the milk begins to thicken

  • Pour about half of the béchamel over the spinach and mix

  • Cover the bottom of the baking dish you will use for cooking with a layer of béchamel

  • Start layering the lasagna alternating the ingredients, then add the first pasta sheet, distribute the spinach, and sprinkle with Grana cheese

  • Distribute the speck slices and cover with the béchamel

  • Continue layering until all ingredients are used, finishing with the last layer of béchamel and Grana

  • Distribute coarsely chopped walnuts over the entire surface (optional)

  • Place the dish in the air fryer on the grill and cook on air fry or bake at 356°F for 15 minutes

  • Once ready, remove the lasagna from the oven and let them rest for a few minutes to settle before slicing

Oven Cooking


Preheat the oven and bake at 356°F for approximately 25/30 minutes
Tip: if you want a well-browned surface, you can switch to 392°F grill for the last 3 minutes (be careful not to burn it!).
👉 Leave them to rest for a few minutes outside the oven before cutting: they compact better.

Storage, Tips, and Variations

Storage:
In the fridge: up to 2–3 days, well enclosed in an airtight container or in their baking dish well covered with foil
In the freezer: up to 2 months, preferably already portioned, you can freeze them both raw and cooked

Tips

If during cooking the surface darkens too much, cover with foil well fastened to the edges of the baking dish, to prevent the air from lifting it and coming into contact with the resistance.

➡️Attention!!!: it is important to fasten it well, because it could burn and cause a fire hazard.

You can reheat them, in the oven, in the air fryer (even in the microwave) at 320°F for about 8/10 minutes. I recommend keeping them at room temperature for an hour before proceeding

Variations

For a vegetarian version, remove the speck, add mushrooms, zucchini, or cubed cheese like mozzarella, provola, or scamorza if you desire a stronger taste

To achieve a creamy lasagna, the béchamel amount is as indicated in the ingredients, but if you want a lighter version, you can use a light béchamel, or halve the doses and add ricotta, stracchino, or crescenza cheese
