The chicken salad with carrots, arugula, and yogurt sauce is a waste-avoiding recipe. I used the chicken breast from a rotisserie chicken I bought for dinner knowing that chicken breast is the least liked part due to its dry and stringy texture.
To make it tasty, just prepare my recipe with julienned carrots and arugula, all seasoned with a flavorful yogurt sauce that you make at home.

- 9 oz chicken breast
- 7 oz carrots
- 1 cup arugula
- 5 oz fat-free Greek yogurt
- to taste garlic powder
- to taste chives
- to taste salt
- to taste lemon juice
- 2 tbsps extra virgin olive oil

Let’s start by preparing the yogurt sauce that will dress the salad.
I used fat-free Greek yogurt, adding two tablespoons of extra virgin olive oil, a sprinkle of garlic powder, and finely chopped fresh chives.
If you can’t find fresh chives, use dried ones.
Season with a pinch of salt, a few drops of lemon juice, and mix.
Peel the carrots and grate them julienne with a multi-purpose grater, add the washed and chopped arugula to the carrots.
Incorporate the yogurt sauce we prepared into the vegetables and mix.
Cut the chicken breast into cubes and incorporate it into the vegetables.
Mix and serve on a serving plate before serving at the table.
It’s ideal to let it rest for an hour in the fridge before enjoying.
