Ingredients
- 4 cups all-purpose flour
- 0.5 cup brown sugar
- 2 eggs
- 5.5 tbsp extra virgin olive oil
- 0.25 cup plant-based drink
- Half packet baking powder
- lemon zest (grated from one lemon)
- sugar (to sprinkle on the surface of the cookies before baking)
Preparation of rustic lactose-free cookies
In a large bowl, mix the flour, sugar, grated lemon zest, and baking powder.
Create a well in the center of the dry ingredients and pour in the eggs, plant-based drink, and extra virgin olive oil; start mixing the liquids with a fork and then gradually incorporate the dry ingredients from around.When the liquids are absorbed by the dry ingredients, transfer to a work surface and knead vigorously until you obtain a homogeneous dough.
Form a ball, wrap it in plastic wrap, and let it rest in the refrigerator for at least an hour.
After the resting time, divide the dough into twenty pieces of about 45 g each.Roll each piece between the work surface and the palm of your hand to form a cylinder about six or seven inches long.
Place the cylinders obtained on a baking sheet lined with parchment paper, keeping them apart.
Sprinkle the cookies with a little sugar and bake in a preheated static oven at 356°F for twenty-five minutes.
Remove from oven, let cool completely, and store your rustic lactose-free cookies in a tin box or airtight container, for up to five days.
