Ingredients

  • 1.32 lbs chicken breast
  • 7 oz bacon
  • 2.5 oz smoked scamorza cheese

How to Make Chicken Rolls with Bacon

  • Lay the chicken breast slices on a cutting board, if they are too thick, gently pound them with a meat tenderizer.

  • Pour and mix the breadcrumbs with salt, rosemary, a pinch of salt, garlic, and a drizzle of oil on a baking sheet. Bread the meat on both sides.

  • Separately, on a cutting board, lay slices of bacon, a slice of breaded chicken breast, and a slice of cheese, then roll up.

  • Tightly secure and repeat this process for the remaining ingredients, arrange all rolls on a baking sheet.

  • Add a drizzle of oil and bake at 356°F for about 25-30 minutes or until golden.

Storage and Tips for Chicken Rolls with Bacon

They keep well in the refrigerator inside an airtight container for up to two days. If you don’t want to use cheese, you can substitute it with speck or cooked ham. For a vegetarian version, you can use spinach and ricotta, and obviously do not wrap them in bacon.
