Steps
To prepare the orange pancakes, first thoroughly wash an orange. For this recipe, I recommend using an untreated orange with edible peel. Dry it well with kitchen paper, remove the ends and cut it into pieces. Then transfer them to the blender along with yogurt, egg, and sugar. Blend until you obtain a smooth cream and transfer it to a bowl.
Next, add the flour and baking powder and mix with a hand whisk until smooth with no lumps. Heat a non-stick pan and pour a tablespoon of batter. Cook for 3 or 4 minutes with the lid on until bubbles begin to form. Flip the pancake with a spatula and finish cooking on the other side, also with the lid on.
Transfer the pancakes to a plate, add powdered sugar or spreadable cream if you prefer, and serve at the table.
