Baked chicken with potatoes, a classic of Italian cuisine but not only, a dish known and prepared all over the world. As an alternative meat, it is very good and economical and above all versatile: it can be cooked in many ways, either refined or simple, but also roasted or boiled, grilled, fried, or stewed. Whether whole or in pieces, let your imagination run wild. Poultry includes, besides the chicken we are talking about today, also turkey, hen, game birds, duck, and capon. Here is how to calculate the portion weight considering the bone waste: 300 grams is the correct portion that should weigh raw chicken per person. In practice, I bought a 1,800 gram chicken for 6 people.

Steps to Prepare Baked Chicken
There is no secret method for preparing baked chicken with potatoes, but as with all dishes, the only secret to success is passion and love for cooking, the food, the destination of the prepared dish: the family. Surely the fresh aromas just picked from the garden are the secret to the success of the dish. Together with my nieces Giulia and Giorgia, I prepared the roasted chicken with potatoes. I peeled the potatoes and cut them into more or less irregular slices. In the meantime, I seasoned the chicken with salt and a tablespoon of roast herbs, plenty of garlic and fresh rosemary, and thyme. I put everything on the baking tray with extra virgin olive oil and white wine, cooked in the oven at 375°F for 1 hour, and halfway through cooking I turned the chicken.
FAQ (Questions and Answers)
How long should whole chicken bake in the oven?
The whole chicken should bake for at least one hour at 375°F. After 30 minutes of cooking, it should be turned.
How can I tell if the whole chicken is cooked?
There are two methods: the first is to make a small incision in a part of the chicken breast and if it appears white, it is cooked. Another method is to check the temperature with a probe inserted deeply into the center of the chicken (in this case the breast) which should be consistently at 158/162°F.
How long can I store cooked chicken in the fridge?
Cooked chicken can be stored in the fridge for up to three or four days, while raw chicken no more than one or two days.
