Savory Radicchio and Gorgonzola Tart

The savory radicchio and gorgonzola tart is suitable to serve as an appetizer or side dish either at lunch or dinner with your family or even if you have guests.

Radicchio and gorgonzola are a great combination that I hadn’t tried yet.

I often cook radicchio with tomatoes or in pasta dishes accompanied by other cheeses like ricotta.

I usually use it in savory preparations but never with gorgonzola.

Since gorgonzola is another type of cheese that I really like, I use it to spread on bread, to prepare super creamy first courses, and in savory tarts 😀

In this recipe, I mixed radicchio and gorgonzola with skyr cheese.

Skyr is a fermented, skimmed cow milk cheese that has a consistency similar to Greek yogurt but differs from the latter because it is more acidic and rich in proteins.

Have you ever tried it?

I sometimes enjoy it in the morning for breakfast instead of yogurt. It’s light and filling at the same time.

Ingredients for the Savory Radicchio and Gorgonzola Tart

  • pasta matta
  • 1/2 yellow onion
  • 7 oz radicchio
  • 3.5 oz gorgonzola
  • 5.3 oz skyr
  • 3 tbsps extra virgin olive oil
  • to taste salt

  • 1 Knife
  • 1 Wooden spoon
  • 1 Pan
  • 1 Parchment paper

Steps for the Savory Radicchio and Gorgonzola Tart

  • Prepare the pasta matta following this recipe: Pasta matta

    Peel the onion and wash it along with the radicchio.

    Cut both vegetables into strips.

    In a pan, heat one tablespoon of oil and add the vegetables, letting them cook for about 5 minutes, stirring with a wooden spoon. Turn off and set aside.

    Once the mixture has cooled slightly, add the skyr cheese, 2 tablespoons of oil, salt to taste, and stir well with the wooden spoon until it becomes creamy.

    Take the pasta matta and spread it in the pan lined with parchment paper.

    Pour the creamy mixture evenly over it.

  • Preheat the oven to 356°F in static mode and bake the savory radicchio and gorgonzola tart for about 50 minutes.

    Serve it hot or warm.
