- 1.1 lbs potatoes
- 1.75 lbs cauliflower
- 1 egg
- 1/3 cups grated parmesan
- to taste thyme
- to taste fine salt
- 1.75 oz brie
- to taste corn flour

Steps for cauliflower and potato patties
To prepare the delicious cauliflower and potato patties, start by peeling the potatoes with a peeler and thoroughly washing the cauliflower under running water. Cut the potatoes into pieces and the cauliflower into florets.
Bring a pot with steam basket to a boil and cook the vegetables for about 10-12 minutes, until done. Test with a fork. If it pierces easily and they are tender, they are cooked; they should not be mushy.
Mash with a potato masher
Place in a bowl along with the egg, thyme, parmesan, and salt, and mix everything well
Take a portion of the mixture, about a heaping tablespoon, insert a piece of brie or scamorza in the center, and close it to form a patty.
Bread with corn flour
on both sides
Place on a baking tray or a dish for air fryer, slightly greased, and drizzle with a splash of extra virgin olive oil using a oil sprayer and bake at 350 degrees Fahrenheit for about 20-25 minutes in a static oven until golden, and in an air fryer at 350 degrees Fahrenheit for 12-15 minutes until golden.
Remove from oven, let rest for a few minutes, plate, and serve hot to enjoy them crunchy with a melty and creamy heart
Storage
The cauliflower and potato patties can be stored for no more than 2 hours at room temperature.
Store in the refrigerator in an airtight container for two to three days.
Before serving, reheat for a few minutes in the oven or air fryer at 320 degrees Fahrenheit to restore crispiness.
