Ingredients
- 11 oz mixed pasta
- 4 potatoes
- 5 oz pork cheek (in one piece)
- 3.5 oz grated Pecorino cheese
- Half onion
- Half carrot
- 1 stalk celery (small)
- pepper
Preparation of Pasta and Potatoes with Cheese and Pepper
Clean and chop the onion, carrot, and celery and set them aside.
Peel the potatoes and cut them into small cubes.
Cut the pork cheek into strips.
In a large pot, brown the pork cheek until the fat has melted and the pork cheek is nice and crispy.Take out a handful of pork cheek and add the chopped carrot, onion, and celery to the pot.
Let them sauté then add the potato cubes and let them flavor for a few minutes, stirring often.
Cover with boiling water, not more than necessary to cover them, and let them cook for about ten minutes until the potatoes are soft.Add the raw pasta directly to the pot and cook it as if making a risotto, adding a little hot water as needed until the pasta is fully cooked and the cooking liquid has reduced.
Turn off the heat and add the grated Pecorino cheese, plenty of pepper, and stir well.
Distribute on serving plates and top with some of the reserved pork cheek, and if desired, a little more grated Pecorino cheese and pepper, your pasta and potatoes with cheese and pepper.
