And here I am, as always, dealing with the preparation of lunches and dinners. Sometimes I have no idea what to do, and it becomes increasingly difficult, especially when your kids ask you to prepare something new. So I opened the fridge and took out some of the ingredients I found: smoked bacon, scamorza, onion, and Parmesan. Boiled the rice, mixed everything together, and it turned out to be a super dish in every way: super tasty, super quick, super easy, super stringy. What more could you want?

Ingredients
- 1.25 cups Arborio rice
- 2 pinches coarse salt
- 7 oz smoked bacon (diced)
- 1.75 oz onion
- 7 oz scamorza cheese
- 2 tbsp grated Parmesan cheese
- 2 tbsp butter
Steps
Put plenty of water in a pot; once it boils, add the coarse salt and the rice. Cook, stirring occasionally.
Meanwhile, in a pan, place the bacon with the onion cut into small cubes and fry over low heat for a few minutes.
Cut the scamorza into small cubes.
Drain the rice slightly al dente, keeping a glass of cooking water aside, and put it directly in the pan with the sauce. Mix well, if it seems slightly dry, add a little cooking water.
Add the scamorza cut into small cubes, the grated Parmesan, the butter, and mix well until the ingredients are well combined.
Serve hot.
It will be beautifully stringy!
Suggestions, Tips
To speed up cooking, I simply boiled the rice, but if you wish, you can also cook it in a pan or wok, gradually adding broth. Once al dente, add the bacon and sautéed onion, then the scamorza, Parmesan, and butter.
