Delicious and creamy like at the café.

Hot chocolate is a delicious and creamy drink perfect to enjoy on cold winter days, a very simple and quick beverage to prepare, which with its goodness will delight both adults and children. This is a recipe I adore, you will get a very delicious and creamy hot chocolate in a cup just like the famous brand sold in sachets, but less sweet, or like the one you would enjoy in an excellent café, it tastes so much like chocolate and is not overly sweet. Very few ingredients are needed to prepare it, and you can customize it as you like by adding cinnamon, a bit more sugar, or making it denser; at the end, I’ll explain how.

Ingredients

  • 1 cup whole milk (also skim or semi-skim)
  • 1 teaspoon cornstarch (heaped)
  • 1 teaspoon unsweetened cocoa powder
  • 1 oz dark chocolate 70%
  • 1 teaspoon sugar (you can add a bit more if you prefer it sweeter)
  • Half espresso cup strong coffee
  • Small meringues (for decoration)

Tools

  • 1 Hand whisk
  • 1 Saucepan

Steps

  • The indicated doses are for 1 cup of hot chocolate, for two cups they should be doubled, and so on…

    In a small saucepan, sift 1 heaped teaspoon of cornstarch and the cocoa, mix with a whisk and add the sugar, mix again.

    Add the milk slowly, little by little, continuing to mix with the whisk.

    Once all the milk has been added and well mixed, add the dark chocolate in pieces.

    Mix again.

    Transfer the mixture to the stove over medium-low heat (if you want a special flavor, add the coffee at this point; if there are children or you don’t prefer it, you can omit it) and continue to stir until the chocolate comes to a boil, then continue cooking for another minute, and it’s ready.

    At this point, you will have a nice creamy chocolate like at the café, a consistency that I find perfect.

    Pour into the cup, decorate with some meringue, or white chocolate chips and serve immediately, nice and hot.

  • Suggestions:

    – Cornstarch can be replaced with the same amount of potato starch, or rice flour or all-purpose flour

    – If you want a denser chocolate instead of one teaspoon of starch, put 2 and continue cooking until it reaches the consistency you prefer.

    – Also for sweetness, if you prefer it sweeter you can add another teaspoon of sugar.
