Sardinian Fregula is entirely made of semolina, and it can also be homemade. It comes in various sizes, small, medium, and large, and can be toasted or not. Ingredients
- 2 artichokes
- 1 spring onion
- to taste oil and salt
- 1 quart water
- 5.3 oz small Sardinian fregula

Steps
In a saucepan, sauté the cleaned and sliced artichokes with the chopped spring onion.
When the artichokes are tender, add the water, adjust the salt and boil for 10 minutes.
Add the Fregula, boil for another 10 minutes, and serve hot.
