Ingredients for Coconut Couscous Fritters
- 6 oz coconut milk
- 3 oz couscous
- 3/4 cup grated coconut (coconut flakes)
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 2 eggs (medium)
- 1 orange zest
- 1 tsp baking powder
- 1 pinch salt
- to taste ground cinnamon
- to taste peanut oil
- to taste sugar

Preparation of COCONUT COUSCOUS FRITTERS
In a saucepan, heat the coconut milk until it nearly comes to a boil.
Put the couscous in a bowl, pour the hot coconut milk over it, add a pinch of salt, stir, cover, and let it rest for 15 minutes.
After the necessary time, stir the couscous, then add the coconut flakes, all-purpose flour, sugar, a few pinches of cinnamon, the grated zest of an orange, and the lightly beaten eggs.
Mix well, first with a fork and then with your hand, until you obtain a homogeneous mixture.
Cover the bowl and place it in the refrigerator for about an hour.
After the necessary time, heat plenty of peanut oil.
Using an ice cream scoop, scoop a portion of the mixture, level it with the blade of a knife, and let it drop into the hot oil.
Fry a few fritters at a time, until they are evenly golden. As they are ready, remove them from the pan with a slotted spoon and place them on some paper towels.
Roll the semolina fritters in sugar and serve them.

Notes
With the quantities indicated in this recipe, I obtained exactly 10 fritters.
If you don’t have an ice cream scoop, replace it with 2 spoons: use one to scoop the dough and the other to push it into the oil, or form balls with your hands. In this case, if you prefer, you can make smaller fritters.
