How to prepare the Lotus Dessert
Start by crumbling the cookies with a mixer, then gradually add the melted butter, mixing well
. Pour the crumbled cookies into a baking dish and with the help of a spatula, compact it well to form your cookie base.
In a bowl, pour the mascarpone, sugar, and Lotus cream, then mix with a blender.
You should obtain a smooth and lump-free cream, then add the already whipped cream and mix from top to bottom without deflating the mixture.
Pour the prepared cream onto the cookie base and let it rest for at least an hour.
At serving time, melt some Lotus cream in the microwave or in a bain-marie, and pour it over the dessert along with some cookies for decoration.
