SALT-BAKED PRAWNS

in

Salt-baked prawns are a main course that is very simple to make and delicious. The prawns baked in salt are perfect for special occasions, romantic dinners, holiday meals, celebrations, or even a family lunch or dinner. To flavor the prawns in the salt crust, I used a lemon, but you can alternatively use an orange or lime. I recommend also taking a look at HOW TO COOK PRAWNS to find other tasty recipes. If you love salt-baked fish, I suggest trying SALT-BAKED SEA BASS and SALT-BAKED SCAMPI. The salt baking method is ancient; the salt creates a shell that keeps the juices inside the food, making them softer. Additionally, the aromas in the preparation, like lemon and rosemary in this case, become more intense. You can create a more compact shell by adding egg white to the salt, but I prefer to keep it pure as it was done in the past. Now let’s see how to prepare the salt-baked prawns, and if you try them, let me know. Barbara

How to make salt-baked prawns

  • Let’s start preparing the salt-baked prawns. Clean the prawns, remove the legs by cutting them with scissors, do not remove the head, and rinse them under running water. I recommend not slicing them to remove the intestine, as salt would penetrate inside the prawns, making them too salty. Wash the lemon and cut it into slices; also wash the rosemary sprigs.

  • Make a layer of salt on the bottom of the baking pan, arrange the lemon slices and rosemary, and place the prawns neatly and close together.

  • Arrange lemon slices and rosemary over the prawns, cover with coarse salt.

  • Bake in a preheated convection oven at 356°F for 20 minutes.

  • When they’re done, take them out of the oven, break the salt crust, remove the prawns, and eliminate excess salt before serving.
