Sicilian Sausage

Ingredients

  • 1.32 lbs sausage
  • 10 cherry tomatoes
  • 1 clove garlic
  • Half cup white wine
  • parsley
  • black olives
  • capers
  • pine nuts
  • extra virgin olive oil
  • salt

Preparation of Sicilian Sausage

  • Wash the cherry tomatoes and cut them in half.
    Peel the garlic clove.
    In a large skillet, heat a few tablespoons of extra virgin olive oil.

  • Add the garlic clove, a tablespoon of capers, a handful of pine nuts, and a handful of black olives and sauté them.
    When the garlic is golden, remove it, add the sausage and brown it on all sides.
    Deglaze with white wine, then cover the skillet with a lid and let it cook over low heat for about ten minutes, stirring occasionally.

  • Add the cherry tomatoes, lightly salting them, and cook for a few more minutes with the lid on, stirring again occasionally.
    Remove the lid, sprinkle with a bit of chopped parsley, and serve your Sicilian sausage.
