I made this orange paradise cake for Sunday, when you crave a simple but well-made dessert. It’s a classic pantry cake, soft, fragrant, tall, that perfumes the entire kitchen already while baking. One of those recipes you often repeat because it always turns out well, without stress.

This easy orange cake is perfect for breakfast and snack, it’s simply good, like the homemade cakes of the past.

The scent of orange is the real star: fresh juice and grated zest make the difference and make this orange paradise cake moist just right, never dry, never heavy. It’s one of those cakes that is even better the next day, in fact, it often disappears sooner.

Ingredients

  • 7 oz butter
  • 1 1/4 cups powdered sugar
  • 4 eggs
  • 1 cup flour (the one you usually use)
  • 2/3 cup potato starch
  • 1/3 cup orange juice
  • orange zest (from 2 oranges)
  • 1 packet baking powder
  • 1 pinch salt

Steps

  • Beat the butter with the powdered sugar for 8–10 minutes until it becomes very light and fluffy (key step for the “paradise” effect).

  • Add the eggs one at a time, continuing to beat, add the grated zest and the orange juice.

  • Sift together flour, potato starch, baking powder, and salt and gently incorporate them with a spatula or at low speed.

  • Pour the batter into a well-greased and floured 9-inch pan, bake in static oven at 340°F for 45–50 minutes.

  • Let it cool completely and dust with powdered sugar.

Useful tips: use untreated oranges because the zest matters a lot; beat butter and sugar well for a high and light paradise cake; do not open the oven in the first 30 minutes or you’ll lose fluffiness; a dusting of powdered sugar only when it’s cold, so it stays nice even the next day.

If you want an even more intense scent: replace 20 ml of juice with orange liqueur (like Cointreau).
For an extra-fluffy cake: use large eggs and do not open the oven in the first 35 minutes.
