Baked Rice Pizza

Ingredients

  • 1 3/4 cups risotto rice
  • 1 3/4 cups peeled tomatoes
  • 3 1/2 oz mozzarella
  • 3 1/2 oz scamorza
  • 1 onion
  • 1 3/4 cups vegetable broth
  • basil
  • extra virgin olive oil
  • butter
  • Parmesan (grated)

Preparation of Baked Rice Pizza

  • Blend the peeled tomatoes and set aside.
    Cut the mozzarella and scamorza into slices.
    Finely chop the onion.
    In a large pot, heat a few tablespoons of extra virgin olive oil and a pat of butter.

  • Add the chopped onion and when it becomes transparent, add the rice and let it toast.
    Add one ladle of broth at a time, cooking the rice for the time indicated on the package minus a couple of minutes, adding the blended peeled tomatoes when you have no more broth, along with a few basil leaves, stirring thoroughly.
    When two minutes are missing from the end of cooking, turn off the heat and stir in some grated Parmesan and a bit of butter.

  • Pour half of the prepared risotto into a buttered baking dish.
    Cover with the slices of mozzarella and scamorza, forming a layer, and then pour over the rest of the risotto, leveling it.
    Sprinkle with a bit of Parmesan and some small pats of butter and bake in a preheated static oven at 356°F for twenty minutes, switching to grill mode in the last minutes of cooking.
    Remove from the oven, let cool slightly, and serve your baked rice pizza.
