  • 1 1/2 cups all-purpose flour
  • 7 tbsps sugar
  • 1/4 cup butter
  • 1/2 tsp baking powder
  • 1 egg (medium size)

  • 3 tbsps brown sugar
  • 2 tsps ground cinnamon
  • 1/2 lemon juice
  • 1 pat butter

Steps for apple heart cupcakes

  •  In a bowl with a handheld spatula, work the soft butter with the sugar, then add the egg, grated lemon zest, and vanilla, working until forming a cream.
    Gradually add the sifted flour along with the baking powder, working quickly until the liquids are well absorbed.
    Pour the dough on a pastry board and work again until forming a very soft but dry dough.
    Wrap it in a sheet of parchment paper and let it rest in the fridge for about 15 minutes.

    Meanwhile, prepare the filling.

  • Peel the apples, remove the core, and cut them into small cubes, place in a pan then add a pat of butter, 3 tablespoons of brown sugar, cinnamon, raisins, and lemon juice, mix well and cook for about 5 minutes, stirring during cooking, just enough to soften the apples a bit.
    Let cool and set aside.

  • Take the dough from the fridge, with your hands take a piece of dough that you place at the bottom and sides of a paper liner, place inside the muffin tin, fill with a generous spoonful of apple, raisin, and cinnamon filling, then cover with more dough, always shaping with your hands and removing excess dough.
    Continue until the ingredients are used up.
    Depending on the size of the liners, the number of pieces varies, they can be 6 large or 10 smaller.
