- 2 medium eggs (3.5 oz shelled)

Steps for Preparing Spoon Apple and Orange Fritters
Start by grating the washed and dried orange zest into the bowl. Then cut the orange in half and extract the juice, I weighed 2.5 oz.
Add the sugar to the orange zest and mix, then add 2 eggs and mix quickly, I used a fork for convenience, but a spoon is also fine.
Then add the melted butter and orange juice, finally the flour, baking powder, and vanilla, all at once. Mix with a spoon to obtain a homogeneous cream. Add chocolate and raisins to enrich.
Peel and dice the apple, sprinkle with the juice of half a lemon, then add them to the obtained cream. Work quickly and then immediately cook our apple and orange fritters.
Put plenty of oil in a small pan with high sides, bring to temperature, about 340°F, and start frying the batter by spoonfuls. Use a teaspoon to drop the mixture taken from the tip of the spoon into the hot oil, be careful not to use a spoon too full because the fritters grow in the oil and would become too large, or risk not cooking well inside.
Keep the fritters in the hot oil for a couple of minutes, in order to let them brown slowly and cook well, if they do not turn over on their own, help with a fork.
When they are well browned, lift them out of the oil with tongs, and dry on absorbent paper, without overlapping them.

If you want to make them even more delicious, prepare the juice of 1-2 oranges, put it in the pan with 2 tablespoons of sugar, let it simmer a bit, then turn the fritters in it, then pass them in granulated sugar, you’ll see how good they are.
