My grandmother from Campania always made these meatballs, a dish that doesn’t require frying but still delivers plenty of taste once finished.

Ingredients

  • 3 cups potato
  • 14 oz ground turkey (or other ground meat as you prefer, even mixed)
  • 2 eggs
  • 5 tbsps grated Parmesan cheese (+ Sardinian Pecorino)
  • as needed extra virgin olive oil
  • as needed fine salt
  • 2 cups breadcrumbs
  • 2 tsps parsley (chopped)
  • 1 clove garlic
  • 1 glass water
  • as needed pine nuts
  • as needed breadcrumbs (if necessary)

Steps

  • Take the potatoes, peel them, wash them, and slice them.

    In a pan, lay the potatoes inside, add a clove of garlic, salt, extra virgin olive oil, parsley, and a big glass of water to cover them.

    Turn on the stove and start cooking on low heat.

    In the meantime, without losing sight of the potatoes cooking, prepare the meatball mixture.

    In a bowl, beat the eggs with salt and parsley.

    Add the well-squeezed breadcrumbs, which you previously soaked in water or milk, as you prefer, the pine nuts, and the ground meat.

    When the mixture is well combined, start shaping the meatballs.

    If the mixture seems too soft, add 2-3 tablespoons of breadcrumbs.

    The potatoes, in the meantime, will have become soft and will be ready to receive the meatballs.

    Combine them and cook for about twenty minutes over medium-low heat.

    Check them often, turning them to cook well on both sides.

    Be careful not to break them during this operation.

    If the water has evaporated too much, add a little more hot water to finish cooking.

  • Once cooked, the potatoes will be nice and floury and creamy and will wonderfully accompany your meatballs.

Tips for Meatballs with Potatoes

I prepared the meatballs with turkey ground meat but they will be delicious with other types of meat as well, and if you prefer, even mixed.

For example, half pork and half beef. Choose what you like best.
