Ingredients

Only a few ingredients needed to recreate these delicious cookies

  • 1 egg
  • 3.5 tbsp milk
  • 1 tbsp extra virgin olive oil
  • 1 tbsp butter
  • 3 oz grated parmesan
  • 1.5 cups all-purpose flour
  • 1 pinch baking soda
  • to taste pepper
  • to taste fine salt

Tools

If you want to present the cookies as I did, you will need sticks to insert into the shapes.

Of course, you can also leave them as is without anything to hold them, like classic sweet cookies.

Steps

We have the ingredients, now let’s prepare the shortcrust dough.

  • Before starting, I usually, organize all the ingredients I need, do as you’re used to.

  • Take a bowl and pour in the egg, the milk, the oil, and the butter

  • Start mixing our ingredients

  • Add a pinch of salt, to taste.

  • After the salt, mix again and add a pinch of pepper. The amount of salt and spices is always to our taste and habits.

  • Add a pinch of baking soda

  • It’s time for the grated parmesan.

  • Pour all the cheese we set aside

  • Slowly our dough will start to become more consistent.

  • Pour the flour in small doses, to combine all the ingredients without creating lumps.

  • Our loaf has taken shape, and is ready to be worked

  • Start rolling out the dough.

    I left it quite thin, if you prefer thicker cookies, just leave a thicker layer and don’t roll the dough too much.

  • I made several shapes, from a clover to a gingerbread man,

  • to a Christmas tree. (make the shapes you like best)

  • Once the cookie is created, I took these adorable sticks and placed them into the dough until halfway, so they won’t fall off when you lift it.

  • Now brush the cookies with a little oil and add poppy seeds and hazelnut crumble.

    As you can see from the photo, my crumble is irregular because I make it myself.

  • Bake the cookies in static mode, 350°F for about 20 minutes. Always check the power and heat based on the characteristics of your oven.

  • Cookies ready to be enjoyed

How to store savory parmesan cookies

If you have leftover savory parmesan cookies, put them in an airtight container or a metal tin.

Place a sheet of kitchen paper at the bottom to absorb any moisture.

Recommended duration: 5–7 days.

In the fridge: it’s not the ideal solution: the humidity of the fridge can make them less crunchy.
Use it only if it’s very hot and you have no alternatives.

This recipe can be made at any time of year.

Just give the cookies a shape that matches the theme of the time, the month in which you prepare them.
