Ingredients
- 3/4 cup buckwheat flour
- 3 1/3 cups whole wheat semolina flour (whole grain)
- 1 1/2 tsp baking powder
- 1 pinch salt
- 1 tsp anise seeds
- 1 tsp almond essence (or sambuca liqueur)
- 4.6 oz white wine
- 1/2 cup seed oil
- 2/3 cup sugar (you can increase to 3/4 cup)

Steps
Soak the anise seeds in the white wine for 10/15 minutes.
In a large bowl, add the flours, baking powder, sugar, and a pinch of salt.
Mix and form the classic fountain well.
Add the oil, almond essence or liqueur, and the white wine with the anise seeds to the center.
Work with a fork and then with your hands until you get a soft but non-sticky dough.
On the rolling board (I use the silicone one, practical and washable) roll out the dough with a rolling pin and then cut the cookies into the shapes you like best.
I used a pastry cutter for crimped ravioli and a round cutter.
I wanted to try this new shape that indeed reminded me of ravioli.
I added pumpkin seeds on top, but it’s optional; you can also leave them plain or dust with powdered sugar.
Storing Rustic Anise Cookies
Before storing the rustic anise cookies, let them cool completely on a rack.
If they are even slightly warm, the moisture will soften them.
