- 21 oz broccoli (frozen or fresh)
- 4 cubes Swiss chard (frozen or fresh)
- 1 1/4 cups dried cannellini beans (to soak)
- to taste extra virgin olive oil
- to taste fine salt
- 2 cloves garlic
- 1 tsp baking soda

Steps
The night before preparation, I soak the beans with a scant teaspoon of baking soda.
The next morning, I rinse them and begin peeling them before boiling them in unsalted water.
Not too much water, just enough to cover them. I cook for about 20 minutes. Once ready, I set them aside without draining the water, as we’ll need it later.
I take the broccoli and Swiss chard cubes, letting them thaw at room temperature so they lose their freezing water.
Now, in the casserole where I cooked the beans, I place 2 cloves of garlic, salt, and EVO oil, adding the broccoli and Swiss chard, which I’ve lightly squeezed (using a colander) to remove freezing water.
I start cooking everything, tasting occasionally to check the cooking.
The soup should cook another 30/40 minutes until the broccoli and Swiss chard are soft and blend beautifully with the beans’ creaminess.
Once ready, plate and enjoy this dish, which not only offers flavor but also provides many health benefits.
