The wine cookies will conquer everyone’s palate, even those who are teetotal like me.
The combination of flours used gives these cookies an incredible crispness.
Crispy on the outside and then melt in your mouth with every bite.
Simple ingredients like extra virgin olive oil, sugar, and anise seeds will contribute to the explosion of flavors you will experience when tasting them.

Ingredients
- 3/8 cup red wine
- 1 tsp anise seeds
- 1 3/4 cups type 2 flour
- 1/3 cup re-milled durum wheat semolina flour (whole grain)
- 3 tbsp whole cane sugar (you can use whichever you prefer)
- 1/3 cup extra virgin olive oil (or seed oil)
- 1 1/4 tsp baking powder
- 1/4 tsp fine salt (a pinch)
- 2/3 oz almonds (one per cookie, if you like, otherwise nothing)

Steps
First, measure the wine in a small pitcher or a small measuring jug and add the anise seeds.
Let them soak for about ten/fifteen minutes.
In a bowl, mix the two flours together and add a pinch of salt.
Add the oil to the wine and pour everything into the center of the dry ingredients.
Add the sugar, for me whole cane sugar, but if you prefer white granulated sugar, that’s fine too.
For sweeter cookies, you can add another 30 grams of sugar compared to my dose.
Finally, add the vanilla baking powder.
With a fork, starting from the center, begin to mix the ingredients until you reach the flour, gradually working from the edges.
When it is no longer possible to mix the dough with the fork, use your hands to create the dough ball.
With the dough ball ready, break off pieces and weigh them to make sure they are all equal.
Each cookie weighs about 26 grams.
With these quantities, you will get about 16/17 cookies.
Place the cookies on parchment paper or a silicone mat.
Preheat the oven to 356 degrees Fahrenheit and as soon as it’s at temperature, bake for about 21 minutes.
After taking them out of the oven, let them cool slightly to enjoy their full crispness.
Tips for Storing Wine Cookies
The wine cookies can be stored in a glass airtight cookie jar and will remain crisp for two or three days and beyond.
