Ingredients

  • 6 oz sparkling water
  • 2/3 cup low-fat yogurt
  • 2 tbsp sugar (if you want to add sweetness you can go up to 1/4 cup)

Steps

  • This time, the cake, I wanted to experiment with in my food processor and I can tell you that if you want you can make it there too.

    Great result.

    The procedure and steps will be the same whether you use the bowl or an appliance.

    Take a bowl (or the processor’s jug) and mix together yogurt and sugar.

    I always prefer to use little sugar, if you like it sweeter you can go up to 50/60 grams, compared to my amount.

    Combine the oil, the salt (a pinch), a few drops of almond essence, and if you like, a teaspoon of rum.

    Now pour in the first part of flour by sprinkling and the chocolate chips or shavings.

    Mix.

    When the batter is no longer liquid add the sparkling water, the remaining flour, and the sifted packet of baking powder.

    Everything is ready to be poured into our previously greased and floured mold.

    At this point, all that remains is to bake.

    Oven static mode, preheated to 340°F for about 35/40 minutes.

    Before turning off the oven, always do the toothpick test.

    What will surprise you is the SOFTNESS of this cake, so simple yet so good and light.

Tips on storing the delicious egg-free cake

The delicious egg-free cake can be stored for two to three days in a classic glass dome cake stand.
